Cannelés Bordelais are well-known sweet pastries in France and can be found in most bakeries there. So we were very pleasantly surprised recently when one of our friends served us this delectable sweet treat recently. The cannelés were so good – with its caramelized sugar on the outside and spongy soft pastry on the inside -- that we shamelessly ate a dozen of these in one sitting! Our hostess, Yannick, very kindly shared the recipe with us. We hope you try this at home and you too will fall in love with it!
Ingredients:
2 eggs plus 2 egg yolks
½ liter of milk
1 tbsp vanilla
125g flour
220g sugar
2 tbsp vegetable oil
2 tbsp rum
Directions:
Heat the milk and vanilla in a small saucepan. In a mixing bowl, beat the eggs with sugar, then mix in the flour and pour in hot milk slowly, whisking all the time.
Leave in cold refrigerator for 30 minutes, then add the oil. Let rest for 12 hours then add the rum. Fill cannele molds or other small shaped mold ½ full. Bake in a preheated oven at 240 degrees C for 10 minutes, then lower the temperature to 180 degrees C. Bake for 1 more hour. Remove the canneles from the molds and serve.
