This is a very easy sauce you can make at home for a casual family dinner or for company. It’s a bit spicy but the level of spiciness can be adjusted to taste. This sauce can also be used as an accompaniment to parmesan chicken or eggplant fritters as well. Enjoy!



Ingredients:


2 tbsp olive oil

3 cloves garlic, chopped

1 tsp crushed red pepper flakes, or more to taste

1 tbsp dried rosemary

4 tbsp fresh chopped basil leaves

1 large can crushed tomatoes, or about 1 kilo peeled and crushed tomatoes

1/3 cup red wine

1/3 cup grated parmesan cheese

Salt and Pepper to taste


Directions:


In a skillet, sauté the garlic, rosemary and red pepper flakes in the olive oil. Add tomatoes, wine and salt and pepper. Cook on medium heat and when the sauce begins to bubble, reduce the heat, stirring occasionally. Cook for 15 minutes or until the sauce is thickened. Add basil and parmesan and stir, cooking for 5 minutes more. Toss with cooked pasta and serve immediately.


Serves 4.
